Why Does Homemade Mayonnaise Break? How to Rescue the Emulsion

Mayonnaise breaks when the water-and-egg phase cannot keep newly added oil divided into tiny droplets. Add oil slowly at the start, keep ratios controlled, and rescue a broken batch by starting a fresh small base and gradually whisking the broken mixture into it.

Mayonnaise is an oil-in-water emulsion. The finished sauce looks uniform because oil is divided into countless tiny droplets dispersed through a continuous phase made from egg, acid, and water. When those droplets merge into larger pools, the sauce becomes thin, greasy, or visibly separated.

Why adding oil too quickly breaks the sauce

At the beginning, the bowl contains only a small water phase and limited emulsifying material from the egg yolk. If a large stream of oil arrives before the first droplets are stabilized, they collide and combine faster than the mixture can coat them.

Start with drops or a very thin stream while whisking continuously. Once the mixture becomes pale and thick, it can usually accept oil more quickly because a stable network of small droplets already exists.

A blender or immersion blender can create droplets rapidly, but the vessel and ingredient order matter. Follow a tested recipe designed for that tool rather than applying hand-whisk ratios blindly.

Check the oil-to-water balance

A mayonnaise batch can hold a large amount of oil, but it still needs enough water-based liquid for the droplets to remain dispersed. If the sauce becomes extremely stiff and glossy before all the oil is added, whisking in a teaspoon of water or acid may restore flexibility.

Do not pour in a large amount of liquid at once. Small measured adjustments are easier to incorporate.

An accidental extra cup of oil, a very small yolk, or omitted lemon juice can push the recipe beyond what the mixture can stabilize.

Temperature can change the process

Ingredients at very different temperatures may combine less predictably. Cold oil can thicken the mixture and make hand whisking harder, while excessive heat can alter the egg proteins and reduce stability.

Use the temperature specified by the recipe. Do not leave raw egg ingredients at room temperature longer than necessary merely to warm them.

Salt and acid are not only flavor

Lemon juice or vinegar contributes water and acidity. Mustard can add both water and compounds that help stabilize droplets. Salt affects flavor and the behavior of proteins, but none of these ingredients can compensate for adding oil far too quickly.

Measure rather than adding all seasonings by eye during the fragile first stage.

How to rescue a broken mayonnaise

Use a clean bowl. Add a fresh egg yolk, or start with a small spoonful of water or mustard when the recipe allows. Whisk that base, then add the broken mayonnaise a teaspoon at a time as though it were the oil.

Once the new emulsion thickens, continue in a thin stream. Stop periodically to scrape the bowl and confirm that no oil layer remains underneath.

If the rescued sauce becomes too thick, add water or acid in very small amounts. If it breaks again, the batch may contain too much oil for the available water phase or the mixture may be overheating.

What not to do

Do not keep pouring oil into a mixture that has already separated. More oil increases the phase that the failed emulsion cannot hold.

Do not assume vigorous beating alone will fix a fully broken batch. A fresh continuous phase is usually needed.

Do not use a cracked, dirty, or unrefrigerated egg because the sauce will hide its condition.

Handle uncooked egg safely

Homemade mayonnaise is commonly served without a cooking step sufficient to eliminate pathogens. USDA guidance recommends pasteurized eggs or pasteurized egg products for recipes that use raw or undercooked eggs, particularly for people at higher risk of foodborne illness. [1]

Use clean utensils and containers, refrigerate the mayonnaise promptly, and follow a tested recipe or food-safety authority for storage time. Discard the sauce after unsafe temperature exposure, visible mold, gas, off odor, or uncertain handling.

Acid improves flavor and emulsion behavior, but home acidification should not be treated as proof that a raw-egg sauce is shelf-stable.

The practical sequence

Begin with a measured egg-and-water base, add oil slowly until the emulsion is established, control temperature and ratios, and pause if the sauce becomes too stiff. If it breaks, start a new small base and gradually incorporate the failed mixture. The rescue works because you rebuild the droplet structure instead of trying to beat separated oil into submission.
