Can You Cut Mold Off Cheese and Eat the Rest?
An isolated mold spot on firm hard cheese can generally be removed by cutting at least one inch around and below it. Soft, shredded, sliced, and crumbled cheeses should be discarded because contamination can extend beyond the visible spot.

It depends on the cheese.
For a firm hard cheese, USDA says an isolated mold spot can generally be removed by cutting at least one inch around and below it.
Discard soft cheese, cream cheese, cottage cheese, ricotta, shredded cheese, sliced cheese, and crumbled cheese. Mold and associated contamination can extend beyond the visible surface in moist or porous food. [1]
Hard cheese that may be trimmed
Examples of firm cheese that may qualify include cheddar, Parmesan, Romano, Swiss, and other dense hard cheeses.
The cheese should otherwise be within its storage period, properly refrigerated, firm, free from slime and abnormal odor, affected in one limited area, and not included in a recall.
USDA permits trimming hard cheese because mold generally cannot penetrate the dense interior as readily as it can penetrate softer food. [1]

How to trim a hard cheese
- Do not sniff the mold closely.
- Place the cheese on a clean surface.
- Use a clean knife.
- Cut at least one inch around the visible mold.
- Cut at least one inch below it.

- Discard the removed section.
- Wrap the remaining cheese in fresh material.
- Clean the knife, board, hands, and storage area.

If the cheese is too small to leave the full margin, discard it.
Soft cheese should be discarded
Discard moldy cottage cheese, cream cheese, ricotta, queso fresco, fresh mozzarella, soft goat cheese, and other high-moisture cheeses.
Mold and bacteria can spread beneath the visible surface. Removing the colored spot does not reliably remove the affected material.
Soft cheese also provides little physical margin for a one-inch cut in every direction.
Shredded, sliced, and crumbled cheese
Discard the whole package when unintended mold appears in shredded, sliced, or crumbled cheese.
The increased surface area allows contamination to contact many pieces. You cannot reliably identify which fragments were exposed.
Do not pick out the visibly moldy shreds and return the rest to service.
What about blue cheese, Brie, and Camembert?
Molds intentionally used to produce blue cheese, Gorgonzola, Roquefort, Brie, Camembert, and related cheeses are part of the product.
Unexpected growth can still occur.
Warning signs include fuzzy growth unlike the intended veining or rind, unusual color, slime, abnormal ammonia or rotten odor, damaged packaging, or growth in a location where it is not expected.
Use the producer’s instructions or discard the cheese when you cannot distinguish intended rind or veining from spoilage.
Do not smell mold closely
USDA advises against sniffing moldy food because inhaled spores can irritate the respiratory system. [1]
Inspect visually without placing the food beneath your nose.
Check the rest of the package
Inspect the wrapping, container, adjacent pieces, refrigerator shelf, moisture accumulation, and other food that touched the cheese.
Replace contaminated wrapping and clean the storage surface with a food-safe method.
Do not combine bleach with ammonia, vinegar, or another cleaner.
Mold color does not identify safety
Color does not reliably reveal the mold species, toxin production, depth of penetration, or whether other bacteria are present.
A white mold is not automatically harmless. A green mold is not automatically the same organism used in blue cheese.
Laboratory identification cannot be performed by comparing refrigerator growth with photographs online.
A recall overrides trimming
Discard or return cheese according to a recall notice even when no mold is visible.
A recall can involve Listeria monocytogenes, Salmonella, undeclared allergens, foreign material, or another hazard. Trimming does not correct a recall.
Prevent future mold
Use clean hands and utensils, wrap cheese securely, keep the refrigerator at 40°F or below, avoid trapping excess condensation, label opening dates, and clean spills promptly.
