Why Does Brown Sugar Get Hard, and How Do You Soften It?

Best method when you have time
Place the hardened sugar in a clean, tightly sealed container.
Add one of the following without pouring water directly onto the sugar: a slice of fresh bread; a damp, not dripping, paper towel separated from the sugar by foil or plastic wrap; or a clean food-safe terra-cotta sugar disk used according to its instructions.
Seal the container and wait.
Utah State University Extension recommends placing a bread slice in a sealed bag with hardened brown sugar and allowing up to 24 hours for moisture transfer. Manufacturer guidance for larger or harder quantities may allow longer. [1] [2]
Remove the bread or damp material after the sugar softens. Break remaining clumps with a fork and reseal the container.
Do not leave fresh food in the container indefinitely.
Microwave method
Microwave only the amount needed for the recipe.
- Transfer the sugar to a microwave-safe bowl.
- Cover it with a damp, not dripping, white paper towel.
- Heat in short intervals.
- Check and stir between intervals.
- Use the sugar promptly.
Manufacturer guidance commonly recommends checking at approximately 20- to 30-second intervals. Microwave power varies, so observation matters more than blindly trusting one time. [2]
Use oven mitts and keep your face away when removing a covered bowl because trapped steam may escape. The sugar itself can become hot enough to burn.
Low-oven method
For a larger block that must be used immediately:
- Put the sugar in an oven-safe pan.
- Warm it at approximately 250°F.

- Remove it as soon as it softens.
- Measure the required amount while warm.
Do not leave it unattended or raise the temperature to hurry the process. Oven-softened sugar can harden again after cooling. [2]
Should you add water directly?
Usually not.
Pouring water onto brown sugar can create wet pockets, partially dissolve crystals, and change the amount of water entering a recipe. Controlled moisture transfer is easier to manage.
If a recipe later dissolves the sugar completely in liquid, small texture differences may matter less, but direct wetting still makes accurate measurement harder.
How to prevent hardening
After opening, move the sugar to an airtight, moisture-resistant container, close the lid immediately after measuring, keep it away from heat, avoid leaving the inner bag loosely folded, and store it at ordinary room temperature unless the manufacturer directs otherwise.

Can a solid block still be measured?
Do not estimate packed volume from a block.
Soften it first, then either pack it into the measuring cup as the recipe directs or weigh it when the recipe provides a mass. Weight is more reliable when a recipe lists grams.
When to discard it
Discard brown sugar when it has visible insects, rodent contamination, mold, an unexplained chemical odor, contamination from a broken container, or foreign material that cannot be removed safely.
Ordinary hardening alone does not require throwing it away.
