How Does Baking Powder Work?
Baking powder combines a dry acid and base that release carbon dioxide after liquid is added; heat expands those bubbles while the batter or dough sets around them.
What is actually in the can?
Baking powder combines three jobs in one dry mixture:
- A base: usually sodium bicarbonate—the same chemical used as baking soda.
- One or more dry acids: these react with the base after moisture reaches them.
- A starch: this helps keep the acid and base dry and separated in storage.
That built-in acid is the important difference between baking powder and baking soda. Baking soda needs enough acid elsewhere in the recipe. Baking powder brings its own.
The rise, in three moves

Liquid starts the reaction
Water lets the dry acid and base dissolve and meet. Their reaction releases carbon dioxide into the batter or dough.

Bubbles get trapped
The gas fills existing air pockets in the mixture. Mixing method and batter structure decide how well those pockets hold.

Heat expands, then sets
In the oven, gas expands and double-acting powder releases another round. Proteins and starches then set the final structure.
What “double acting” means
Most grocery-store baking powder is double acting. It contains acids that react at different times: some gas is released after mixing, and more is released as the food heats. Utah State University Extension describes this as one rise immediately and another when heated.
That second reaction gives you a little breathing room, but not unlimited time. Once a wet batter is mixed, get it into the prepared pan and oven instead of letting it conduct a long kitchen meeting.
Why baking powder fails
The can is tired
Moisture and time reduce its useful activity.
Try this: Test a teaspoon in one-third cup of hot water. Vigorous foaming means it still has rising power.
The batter waited
The first gas release began at mixing, then escaped while the bowl sat.
Try this: Preheat the oven and prepare the pan before adding the wet ingredients.
The amount drifted
A heaped spoon or a confused substitution changed the acid-base balance.
Try this: Use a level measuring spoon and keep baking soda substitutions recipe-specific.
The bubbles got bullied
Aggressive mixing can damage the structure that needs to hold expanding gas.
Try this: For tender quick breads and biscuits, mix only until the dry streaks disappear.
Quick freshness test
Penn State Extension recommends this simple check:
- Put 1 teaspoon baking powder in a small bowl or cup.
- Add ⅓ cup hot water.
- Look for vigorous foam.
If it barely reacts, replace it. This test tells you whether the powder still produces gas; it does not rescue a recipe with the wrong ratios.

Utah State University Extension lists workable baking-powder substitutions that combine baking soda with an acid such as cream of tartar, but substitutions can change flavor, texture, or volume. When the recipe matters, matching the intended leavener is the cheap safe move.
